Recipes from the house
The traditional dishes of Tuscia that we cook at the house and that you learn in the cooking classes.
- Acquacotta
- The cowherds' soup: wild greens, stale bread, an egg and a thread of oil. In winter it is exactly the right dish.
- Egg fettuccine
- One egg for every hundred grams of flour, rolled by hand and cut with a knife.
- Ravioli
- Filled with ricotta and sealed by hand, one by one.
- Pasta alla chitarra
- Pressed through the strings of the frame, rough enough to hold the sauce.
- Hazelnut tozzetti
- The dry biscuits of the Viterbo countryside, made with Cimini hazelnuts. You dip them in wine.
- Apple cake
- The one you find at breakfast.
